Ingredients
- 3 pounds bone-in, skin-on chicken thighs
- Salt
- Black pepper
- 1/2 cup (1 stick) unsalted butter, softened to room temperature
- 5 cloves garlic, minced
- Zest of 1 lemon
- 1 Tablespoon dried thyme
- 2 pounds baby potatoes
- 2 roma tomatoes, chopped
- 1 lemon, cut into rounds
- 1 Tablespoon freshly chopped parsley, for garnish (optional)
Instructions
- Preheat oven to 425 degrees F. In a medium bowl, stir together the salt, pepper, butter, garlic, lemon zest, and thyme until incorporated. Then pat the chicken thighs dry with a paper towel before rubbing the butter mixture all over, including under the skin.
- In a baking dish, layer the potatoes on the bottom and arrange the chicken thighs, tomatoes, and lemon rounds on top.
- Bake for 30-40 minutes, or until thighs read a temperature of 160F when inserting a thermometer. For more crisp skin, broil on high for 1-2 minutes until golden brown. Serve with parsley as garnish if desired and enjoy!
