Description

These gluten-free Italian Beef Meatballs are baked in the oven until perfectly browned and juicy. Made with just one pound of ground beef, fresh parsley, garlic, and classic Italian spices, they come together in about 30 minutes and cost under $10 to make. Whether you’re tossing them in marinara over pasta, building a meatball sub, or batch cooking for the week, this is a recipe you’ll come back to again and again.

Ingredients

Scale
  • 1 pound ground beef 80/20
  • 1 egg
  • 2 garlic cloves, minced
  • 1/2 cup fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper and set aside.
  2. Add the ground beef, egg, minced garlic, parsley, Italian seasoning, paprika, salt, and black pepper to a large mixing bowl. Mix everything together with your hands just until combined.
  3. Scoop and roll the mixture into balls about 1½ inches in diameter (roughly the size of a golf ball). You should get 16–18 meatballs out of the mixture. Place them evenly spaced on the prepared baking sheet.
  4. Bake for 18 to 22 minutes, or until the meatballs are browned on the outside and cooked through and have an internal temperature of 160°F.
  5. Remove from the oven and let rest for 5 minutes before serving.
