Description

A crisp, refreshing Cucumber Tomato Salad made with just a handful of pantry-friendly ingredients in 15 minutes flat. Juicy tomatoes, cool cucumber, red onion, and bright cilantro come together in a lemony, olive oil dressing. It’s the ultimate budget side dish for summer cookouts, weeknight dinners, and everything in between!

Ingredients

Scale
  • 3 cups tomatoes, chopped
  • 3 cups cucumber, chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, finely chopped
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large mixing bowl, combine the chopped tomatoes, cucumber, red onion, and cilantro. Add lemon juice, salt, and pepper, and toss everything together until well coated. Cover the bowl and place in the refrigerator to chill for at least 10 minutes to draw out any excess moisture.
  2. When ready to serve, remove the bowl from the fridge and drain off any excess liquid that has accumulated. Drizzle olive oil and toss gently to combine. Season to taste with additional salt, pepper, or lemon juice if needed, and serve immediately.
