I can’t think of a more quintessential breakfast food than a heaping stack of golden fluffy pancakes. This recipe is an all-time favorite in my household and makes for the best start to the morning or weekend.

- 3/4 cup pancake mix
- 1 cup milk
- Olive oil
- Choice of toppings (blueberries, bananas, maple syrup, etc.)
Instructions
- In a large bowl, mix pancake mix and milk lightly with a whisk until smooth. Then let the prepared batter sit for 2 minutes.
- While the batter sits, heat a lightly oiled pan over medium-high heat. Then pour or scoop 1/4 cup of batter for each pancake onto the hot pan.
- Cook for 2-3 minutes on each side, flipping whenever bubbles form on the top and the edges start to look dry and set. Pancakes should look golden brown when fully cooked.
- Top the stack of pancakes with blueberries, bananas, maple syrup, or other desired toppings. Serve and enjoy!
