Description

I can’t think of a more quintessential breakfast food than a heaping stack of golden fluffy pancakes. This recipe is an all-time favorite in my household and makes for the best start to the morning or weekend.


Ingredients

Scale
  • 3/4 cup pancake mix
  • 1 cup milk
  • Olive oil
  • Choice of toppings (blueberries, bananas, maple syrup, etc.)


Instructions

  1. In a large bowl, mix pancake mix and milk lightly with a whisk until smooth. Then let the prepared batter sit for 2 minutes.
  2. While the batter sits, heat a lightly oiled pan over medium-high heat. Then pour or scoop 1/4 cup of batter for each pancake onto the hot pan.
  3. Cook for 2-3 minutes on each side, flipping whenever bubbles form on the top and the edges start to look dry and set. Pancakes should look golden brown when fully cooked.
  4. Top the stack of pancakes with blueberries, bananas, maple syrup, or other desired toppings. Serve and enjoy!
