Description
This flavorful and delicious sheet pan sausage & vegetables comes together quickly and makes for a ridiculously easy meal to whip up. You won’t have to stress over what to make for dinner and best of all, it saves you cleanup time!
Ingredients

- 1 pound baby potatoes, halved
- 1 medium broccoli, cut into florets
- 5-6 mini bell peppers, chopped
- 1/2 red onion, quartered
- 5 whole garlic cloves
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon Italian seasoning
- Salt
- Black pepper
- Pinch of crushed red pepper flakes
- 12 oz. mild Italian sausage, cut into 1/2-in rounds
Instructions
- Preheat oven to 400 degrees F. On a large sheet tray, arrange potatoes, broccoli, red bell pepper, red onion, and garlic cloves. Drizzle with olive oil and season with Italian seasoning, salt, pepper, and red pepper flakes.
- Toss to coat all the veggies and spread into an even layer. Bake in the oven for 25 minutes, then remove the tray and add the sausage. Toss with veggies and spread back into an even layer.
- Bake again for another 30 minutes, or until sausage is browned and warmed through and the vegetables are crisp and tender.
- Serve immediately and enjoy!
