Description

If you’re looking for a delicious, easy breakfast that’s quick to make yet satisfying, these bacon, egg, & cheese croissants will give any fast food breakfast sandwich a run for its money. With perfectly runny over-easy eggs, crispy bacon, and melted cheese encased in a flaky croissant, it’s the perfect way to start your morning.


Ingredients

  • 4 medium-sized croissants
  • 12 slices pre-cooked turkey bacon (3 for each croissant)
  • 4 large eggs
  • Salt and pepper to taste
  • Handful of shredded Mexican cheese
  • Parsley as garnish (optional)


Instructions

  1. Preheat oven to 400 degrees F. Cut the top halves of the croissants away, leaving behind a “pocket” to fill with the remaining ingredients. Place them on a baking sheet lined with parchment paper.
  2. For each croissant, add 3 slices of the bacon, one egg yolk, and sprinkle salt and pepper. Then add a handful of the shredded cheese. Repeat for the remaining croissants.
  3. Bake in the oven for 15 minutes, or until the cheese is fully melted and the eggs are cooked through. Garnish with parsley if desired and serve immediately.
