We love a good one-pan recipe, which probably explains why this Paprika Chicken with Chickpeas & Tomatoes has become a dish on weekly rotation for us! Chicken breasts are seasoned with smoky paprika and baked in the oven alongside earthy chickpeas and juicy cherry tomatoes. It’s full of flavor and a perfect weeknight meal.

- 1 15-oz can of chickpeas, rinsed
- 1 cup cherry tomatoes
- 2 Tablespoons olive oil
- 8 whole garlic cloves
- 1 Tablespoon salt
- 1 Tablespoon black pepper
- 2 Tablespoons paprika
- 4 6-oz boneless, skinless chicken breasts
Instructions
- Preheat oven to 425 degrees F. In a small bowl, toss the tomatoes, garlic cloves, and chickpeas with 1 Tbsp paprika and 1/2 tsp each salt and pepper. Then set aside.
- Season the chicken breasts with 1 Tbsp paprika, 1/2 tsp each salt and pepper, and a drizzle of olive oil. Rub the mixture on both sides thoroughly.
- Transfer the chicken onto a sheet pan. Then add the chickpeas, tomatoes, and garlic onto the pan with the chicken, spreading out the mixture so that it cooks evenly.
- Bake in the oven for 35 minutes, or until the chicken reaches an internal temperature of 165 degrees F. Serve immediately and enjoy!
