Description

This One Pot Turmeric Chicken & Rice is one of our latest obsessions. We love a good one pot meal that doesn’t skimp on flavor and taste, and this recipe delivers on both fronts. It’s the perfect super easy, healthy, and family-friendly weeknight dinner.


Ingredients

  • 1 4-5-lb whole chicken, cut into 8 pieces
  • 1 Tablespoon salt
  • 1 teaspoon black pepper
  • 1 Tablespoon cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground turmeric
  • Extra-virgin olive oil
  • 1 cup white rice, rinsed and drained
  • 1 cup water
  • Chopped parsley for garnish (optional)


Instructions

  1. Preheat oven to 400°F. Pat the chicken dry with paper towels and season all over with salt, black pepper, cumin, paprika, and turmeric. Drizzle generously with olive oil.
  2. In a large Dutch oven or similar oven-safe pot, add the chicken, making sure to spread them out evenly in the pot. Place in the oven to cook for 30 minutes.
  3. Carefully remove the pot from the oven and transfer the chicken pieces onto a plate. Add the white rice to the remaining juices left over and add 1 cup of water, using a spoon to distribute the grains evenly over the pot.
  4. Add the chicken back into the pot, then cover and place back in the oven, uncovered, for 30 minutes. Remove from the oven and let stand for 5 minutes before serving. Garnish with parsley, if desired.
