- 1 15.5-oz can chickpeas, rinsed
- 1 cup grape tomatoes, halved
- 1 cup fresh parsley, chopped
- 1/4 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- Juice of 1 whole lemon
- 2 Tablespoons olive oil
- Salt & pepper to taste
Instructions
- In a large bowl, add chickpeas, grape tomatoes, parsley, red onion, and feta cheese and toss to combine.
- Add lemon juice and olive oil, and mix to coat. Season to taste with salt and pepper.
- Serve immediately or store in the refrigerator before serving.
