- 3 medium russet potatoes, peeled and cut into wedges
- 2 Tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 Tablespoon paprika
- 1 Tablespoon Italian seasoning
- 1/2 cup grated Parmesan
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F and line a large, rimmed baking sheet with parchment paper.
- Rinse the sliced potato wedges under lukewarm water and let them soak for about 10 minutes to absorb any excess starch.
- In a large bowl, toss the potatoes with the olive oil, salt, pepper, paprika, Italian seasoning, and grated Parmesan.
- Spread the potatoes in an even layer on the baking sheet and bake for 30-40 minutes, or until the potatoes are tender and golden brown around the edges. Turn over the potato wedges in the halfway mark (about 15-20 minutes) and return to oven. The timing will depend on the size of your potatoes.
