  • 3 medium russet potatoes, peeled and cut into wedges
  • 2 Tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 Tablespoon paprika
  • 1 Tablespoon Italian seasoning
  • 1/2 cup grated Parmesan
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F and line a large, rimmed baking sheet with parchment paper.
  2. Rinse the sliced potato wedges under lukewarm water and let them soak for about 10 minutes to absorb any excess starch.
  3. In a large bowl, toss the potatoes with the olive oil, salt, pepper, paprika, Italian seasoning, and grated Parmesan.
  4. Spread the potatoes in an even layer on the baking sheet and bake for 30-40 minutes, or until the potatoes are tender and golden brown around the edges. Turn over the potato wedges in the halfway mark (about 15-20 minutes) and return to oven. The timing will depend on the size of your potatoes.
  5. Sprinkle with parsley if using and serve with ketchup or your preferred dipping sauce.
