Ingredients
For the bread:

1/4 pound cool butter (1 stick), plus more for greasing pan

1/3 cup dark brown sugar

2 eggs at room temperature

2 1/3 cups very ripe bananas (about 5)

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt
For the topping:

3 Tablespoons chopped walnuts

1 Tablespoon granulated sugar

Pinch of cinnamon
Instructions
- Preheat oven to 350°F and lightly grease a 9×5-inch loaf pan with butter.
- In an electric mixer, cream the butter and dark brown sugar together until smooth and fluffy, about 2-3 minutes. Mix in the eggs one at a time, then stir in the mashed bananas until smooth.
- Whisk dry ingredients together and gradually add into the banana mixture just until combined, taking care not to over-mix. Pour the batter into the prepared loaf pan. If adding topping, stir the walnuts, sugar, and cinnamon together and scatter over the batter.
- Bake about 55-65 minutes, until a toothpick inserted into the center comes out clean. Let cool in pan for 10-15 minutes, then turn out onto a wire rack. Slice and serve warm or at room temperature.
