Description

This easy weeknight dinner comes together in under 30 minutes and is bursting with flavor! Juicy pan-fried flat iron steak is prepared in a garlicky parsley marinade, paired with buttery vegetables like brussels sprouts, green beans, and sweet mini peppers. A perfect balance of hearty protein and colorful veggies for a meal that feels restaurant-worthy but simple enough for home!

For the vegetables:

  • 2 tablespoons extra-virgin olive oil
  • 2 cups Brussels sprouts, trimmed and halved
  • 2 cups green beans, ends trimmed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon Italian seasoning
  • 4 mini bell peppers, thinly sliced

For the steak & marinade:

  • 1 tablespoon butter
  • 1 lb flat iron steak
  • 1/2 cup fresh parsley, chopped
  • 6 cloves of garlic, minced
  • 1 cup olive oil
  • 2 tablespoons Italian seasoning
  • Salt + pepper to taste


Instructions

  1. Combine the marinade ingredients in a large bowl and reserve half in a smaller bowl for use later when serving. Remove the steak from its wrapping, pat dry with a paper towel, and place in the same bowl as the rest of the marinade. Rub the marinade over the steak and set aside.
  2. Meanwhile, heat a small frying pan with olive oil over medium-high heat. Add the brussels sprouts and green beans, season with salt, pepper, and Italian seasoning, and cook for 5-7 minutes, stirring frequently, until the veggies are tender and the sprouts are golden-brown in color. Add in the sliced peppers and cook for an additional 5 minutes.
  3. Remove the cooked veggies from the frying pan and add the steak into the pan with butter. Sear for 5-6 minutes per side, or until the internal temperature reaches 150F for a medium-well steak.
  4. Remove steak from the pan and allow to rest before slicing. Arrange the vegetables in a serving bowl, place the sliced steak on top, and dollop the rest of the marinade on the steak. Serve immediately and enjoy!
