Easy Smoked Salmon Cucumber Bites

Description

These smoked salmon cucumber bites are the perfect bite-sized appetizer. With crisp cucumber rounds topped with herbed cream cheese, smoked salmon, red onion, and capers, they’re a crowd-pleasing recipe that’s both easy to make and beautiful to serve. Ideal for holidays, brunch, or cocktail parties!


Ingredients

  • 8 oz cream cheese, softened
  • 1 tablespoon fresh chopped dill
  • Zest of 1 lemon
  • 1 teaspoon lemon juice
  • 1 medium cucumber, cut into 1/2-in slices (about 16 slices)
  • 4 oz smoked salmon, cut into small pieces
  • 1/4 cup red onion, sliced thinly
  • 1/4 cup capers
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh chopped chives (optional)


Instructions

  1. In a small bowl, combine the cream cheese, dill, lemon zest, and lemon juice. Stir well and set aside.
  2. Pat dry the cucumber slices. Using a teaspoon or melon baller, carefully scoop out some of the cucumber flesh from the center to make a little hole without cutting all the way through. Arrange on a serving plate and spread each slice with a small amount of the cream cheese mix.
  3. Top with a small piece of the smoked salmon, red onion slices, and capers. Sprinkle black pepper and garnish with a little more lemon juice and fresh chopped chives, if desired. Serve immediately and enjoy!
