These smoked salmon cucumber bites are the perfect bite-sized appetizer. - 8 oz cream cheese, softened
- 1 tablespoon fresh chopped dill
- Zest of 1 lemon
- 1 teaspoon lemon juice
- 1 medium cucumber, cut into 1/2-in slices (about 16 slices)
- 4 oz smoked salmon, cut into small pieces
- 1/4 cup red onion, sliced thinly
- 1/4 cup capers
- 1/2 teaspoon black pepper
- 1 tablespoon fresh chopped chives (optional)
Instructions
- In a small bowl, combine the cream cheese, dill, lemon zest, and lemon juice. Stir well and set aside.
- Pat dry the cucumber slices. Using a teaspoon or melon baller, carefully scoop out some of the cucumber flesh from the center to make a little hole without cutting all the way through. Arrange on a serving plate and spread each slice with a small amount of the cream cheese mix.
- Top with a small piece of the smoked salmon, red onion slices, and capers. Sprinkle black pepper and garnish with a little more lemon juice and fresh chopped chives, if desired. Serve immediately and enjoy!
