- 1/2 cup tahini
- 1/4 cup water
- Juice of 1 1/2 large lemons
- 3 tablespoons extra-virgin olive oil, plus 1 tablespoon for garnish
- 1 teaspoon cumin
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 1 garlic clove, minced
- 2 15 oz cans chickpeas, drained and rinsed (plus extra set aside for garnish)
- Freshly chopped parsley, for garnish
- Pinch of sumac and za’atar, for garnish
Instructions
- In a small bowl, add the tahini, water, lemon juice, olive oil, cumin, salt, pepper, and minced garlic. Whisk vigorously until the mixture is incorporated and smooth in texture.
- In a food processor fitted with a chopping blade attachment, add the chickpeas and pour in the tahini mixture. Blend until the mixture is thick and creamy, stopping to scrape down any tahini stuck to the sides as necessary. Taste and adjust as necessary.
- Scoop the hummus into a serving bowl or plate, using the back of a spoon to spread it evenly. Top with chickpeas, chopped parsley, a pinch of za’atar and sumac, and a generous drizzle of olive oil. Serve alongside warm pita bread and veggies, if desired.
