  • 4 large russet potatoes, peeled and diced

  • 2 tablespoons extra-virgin olive oil

  • 1/2 cup yellow onion, chopped

  • 1 cup tomatoes, diced

  • 3 garlic cloves, minced

  • 1 pound 80/20 ground beef

  • 2 tablespoons tomato paste

  • 1 teaspoon cumin

  • 1 tablespoon paprika

  • 1 tablespoon Italian seasoning

  • 1 tablespoon salt

  • 1 teaspoon pepper

  • 1/4 cup water

  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F. In a large baking dish, add the potatoes and drizzle generously with olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Bake covered for 20 minutes until potatoes are tender when pierced with a fork.
  2. While the potatoes are baking, heat a large skillet with olive oil over medium-high heat. Add the onion, diced tomatoes, and garlic, and sauté until the onion is translucent and the garlic is fragrant.
  3. Add the ground beef to the skillet and cook until browned and crumbly, about 5-7 minutes. Drain excess fat from the skillet, then add the tomato paste and all the seasonings. Stir to incorporate before adding water to thin the mixture out. Let simmer for 5-7 minutes to thicken slightly.
  4. Remove potatoes from the oven. Spread the beef mixture on top and return, covered, to the oven. Bake until heated through for an additional 15-20 minutes. Top with the cheddar cheese and broil until melted, about 2 minutes.
  5. Remove pan from the oven and let cool for a few minutes. Garnish with fresh parsley if desired and serve.
