4 large russet potatoes, peeled and diced

2 tablespoons extra-virgin olive oil

1/2 cup yellow onion, chopped

1 cup tomatoes, diced

3 garlic cloves, minced

1 pound 80/20 ground beef

2 tablespoons tomato paste

1 teaspoon cumin

1 tablespoon paprika

1 tablespoon Italian seasoning

1 tablespoon salt

1 teaspoon pepper

1/4 cup water

1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F. In a large baking dish, add the potatoes and drizzle generously with olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Bake covered for 20 minutes until potatoes are tender when pierced with a fork.
- While the potatoes are baking, heat a large skillet with olive oil over medium-high heat. Add the onion, diced tomatoes, and garlic, and sauté until the onion is translucent and the garlic is fragrant.
- Add the ground beef to the skillet and cook until browned and crumbly, about 5-7 minutes. Drain excess fat from the skillet, then add the tomato paste and all the seasonings. Stir to incorporate before adding water to thin the mixture out. Let simmer for 5-7 minutes to thicken slightly.
- Remove potatoes from the oven. Spread the beef mixture on top and return, covered, to the oven. Bake until heated through for an additional 15-20 minutes. Top with the cheddar cheese and broil until melted, about 2 minutes.
- Remove pan from the oven and let cool for a few minutes. Garnish with fresh parsley if desired and serve.
