Description

Thick slices of green cabbage are brushed with olive oil, seasoned with smoky paprika and garlic, then roasted until the edges turn deep golden brown and crispy while the centers stay tender. Topped with melted Parmesan, these Crispy Parmesan Cabbage Steaks are a hearty, budget-friendly vegetarian dish that costs just a few dollars to make and comes together with almost no prep at all!

  • 1 medium green cabbage
  • 4 tablespoons extra-virgin olive oil
  • 2 teaspoons paprika
  • 1 tablespoon garlic powder
  • ½ teaspoon salt
  • ½ cup Parmesan cheese, grated
  • Freshly ground black pepper
  • Freshly chopped parsley, for garnish
  • Sour cream, optional

Instructions

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
  2. Remove any loose, wilted, or damaged outer leaves from the cabbage and slice off a thin piece from the bottom to hold it steady. Standing the cabbage upright, slice straight down through the center and through the core into thick, even slices, about 1 to 1½ inches wide. You should get 4 to 6 steaks from a medium head.
  3. Arrange the cabbage steaks in a single layer on the baking sheet. In a small bowl, whisk together the olive oil, paprika, garlic powder, and salt. Brush the mixture generously over both sides of each cabbage steak.
  4. Roast for 25 minutes, rotating the baking sheet halfway, or until cabbage steaks are browned and tender in the center. Remove from the oven and top with the grated Parmesan.
  5. Return to the oven and bake for another 5 minutes, until the edges are deeply golden and crispy and the Parmesan has melted and browned. Finish with a dash of freshly ground black pepper, sprinkle fresh parsley on top, and serve warm with sour cream on the side, if using.
