Description

This Molasses Cake is soft, deeply flavorful, and perfectly spiced with hints of ginger and cinnamon. Made with warm molasses and hot coffee, it has a rich, cozy taste that feels nostalgic and comforting. It’s the perfect easy homemade dessert for any time of year!


Ingredients

  • 1 cup molasses
  • 1 cup hot coffee
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature


Instructions

  1. Preheat the oven to 350°F. Lightly grease an 8” square cake pan with butter and line with parchment paper.
  2. In a small bowl, mix the molasses and hot coffee together until combined and set aside. In a separate bowl, whisk together the flour, baking powder, ginger, cinnamon, and salt. Set aside.
  3. Using a stand mixer with the paddle attachment, cream the butter and sugar together until smooth and fluffy, about 2-3 minutes. Add the eggs one at a time, mixing on low until combined. Scrape down the sides of the mixing bowl a few times to ensure all ingredients are being incorporated.
  4. Add in the molasses mixture until combined. Then gradually add in the flour mixture until the batter is smooth. Pour into the prepared pan and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
  5. Once out of the oven, cover the pan with foil and allow the cake to cool completely before serving. Cut into slices and serve immediately with whipped cream or vanilla ice cream on top.
