Ingredients

  • 1 English cucumber, sliced into 1/2-inch rounds
  • 2 ripe avocados
  • Half of 1 beefsteak tomato, diced (plus more for garnish)
  • 1 to 2 tablespoons lemon juice (about half a lemon)
  • 1/4 cup feta cheese, crumbled
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes, optional

Instructions

  1. In a medium bowl, mash the avocados with the tomato, feta, lemon juice, salt, and black pepper with a fork. Mix until mostly smooth but with a few small chunks left for texture.
  2. Place the cucumber slices on a serving platter. Using a small spoon or cookie scoop, top each cucumber slice with the mashed avocado. Garnish with the extra diced tomatoes, a dash of salt and pepper, and sprinkle a pinch of red pepper flakes for a bit of heat if desired. Serve immediately and enjoy!
