  • 1 15-oz can of chickpeas, rinsed
  • 1 cup cherry tomatoes
  • 2 Tablespoons olive oil
  • 8 whole garlic cloves
  • 1 Tablespoon salt
  • 1 Tablespoon black pepper
  • 2 Tablespoons paprika
  • 4 6-oz boneless, skinless chicken breasts


Instructions

  1. Preheat oven to 425 degrees F. In a small bowl, toss the tomatoes, garlic cloves, and chickpeas with 1 Tbsp paprika and 1/2 tsp each salt and pepper. Then set aside.
  2. Season the chicken breasts with 1 Tbsp paprika, 1/2 tsp each salt and pepper, and a drizzle of olive oil. Rub the mixture on both sides thoroughly.
  3. Transfer the chicken onto a sheet pan. Then add the chickpeas, tomatoes, and garlic onto the pan with the chicken, spreading out the mixture so that it cooks evenly.
  4. Bake in the oven for 35 minutes, or until the chicken reaches an internal temperature of 165 degrees F. Serve immediately and enjoy!
