How to make honey glazed carrots

  • 2 pounds medium carrots (about 8-10), peeled and cut into 1.5-in pieces
  • 1 Tablespoon extra-virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 Tablespoons butter
  • 1 Tablespoon honey
  • Chopped fresh parsley leaves, for garnish (optional)


Instructions

  1. Preheat the oven to 425°F. Peel and cut the carrots crosswise into 1.5-in pieces, then set aside.
  2. In a small bowl, combine olive oil, vinegar, salt, and pepper and whisk vigorously to combine. Add in the sliced carrots and toss to coat, before laying them out in a single layer on a sheet pan.
  3. Roast the carrots in the oven for 15 minutes. Toss them halfway and roast for an additional 15-20 minutes more, until the carrots are tender and browned on the bottom.
  4. While the carrots are roasting in the oven, melt butter in a small saucepan over medium heat. Before the butter fully melts, add honey and whisk everything together gently until bubbling.
  5. Pour the butter and honey glaze into a bowl and add in the carrots. Toss until coated with the glaze. Transfer to a serving bowl and garnish with chopped parsley leaves if desired.
