This easy stuffed chicken breast is loaded with spinach, melty cheese, and tangy sun-dried tomatoes. A juicy and flavorful dinner that’s baked to perfection in the oven—great for weeknights or special occasions!

- 4 boneless skinless chicken breasts
- Salt and pepper, to taste
- 2 cups spinach, roughly chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup shredded cheese
- 1/4 cup grated Parmesan
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F. Pat the chicken breasts dry and season both sides generously with salt and pepper. Set aside.
- In a medium bowl, add the spinach, sun-dried tomatoes, shredded cheese, and grated Parmesan. Toss to combine.
- Lay out chicken breasts on a cutting board to add the spinach and cheese filling on top. Portion the filling out evenly across all four. Then carefully fold the chicken breast over the filling so that it’s encased inside.
- Transfer to a baking dish with olive oil drizzled on top and bake covered with either aluminum foil or a lid for 35-45 minutes. Then uncover and set the oven on broil for 10-15 minutes. Remove from oven and let rest for 5 minutes before serving.
