3/4 cup cottage cheese
1 tablespoon olive oil
2 teaspoons lemon zest
1 tablespoon lemon juice, plus extra for garnish
Pinch of salt and black pepper, to taste
1 head of romaine or butter lettuce
1 medium cucumber, peeled into strips
8 oz thinly sliced smoked salmon
1 ripe avocado, halved and cut into slices
1/2 cup capers
Sprigs of fresh dill
Instructions
