Smoked Salmon and Avocado Lettuce Wraps

Description

These smoked salmon lettuce wraps are the perfect light, fresh, and protein-packed appetizer! Crisp lettuce leaves are filled with creamy cottage cheese, cucumber, avocado, smoked salmon, briny capers, and fresh dill for a quick lunch or appetizer that comes together in minutes.


Ingredients

  • 3/4 cup cottage cheese

  • 1 tablespoon olive oil

  • 2 teaspoons lemon zest

  • 1 tablespoon lemon juice, plus extra for garnish

  • Pinch of salt and black pepper, to taste

  • 1 head of romaine or butter lettuce

  • 1 medium cucumber, peeled into strips

  • 8 oz thinly sliced smoked salmon

  • 1 ripe avocado, halved and cut into slices

  • 1/2 cup capers

  • Sprigs of fresh dill


Instructions

  1. In a small bowl, combine the cottage cheese, olive oil, lemon zest, lemon juice, salt, and black pepper. Stir until well combined and set aside.
  2. Wash and dry the lettuce, then carefully peel away the leaves and place on a clean, flat surface. Using the back of a spoon, spread the cottage cheese mixture evenly across each piece of lettuce, being careful not to tear the leaves.
  3. Place a layer of cucumber slices, smoked salmon, and avocado over the cream cheese, dividing them evenly across each piece of lettuce. Top with capers, sprigs of dill, a drizzle of olive oil, and some lemon juice (if left over) before serving.
