How to make yellow lentil soup

Start by heating a large pot over medium-high heat with olive oil, then adding onion and carrots to the pot. Sauté for a few minutes until softened, then add the garlic cloves, salt, pepper, cumin, and turmeric.

Add the yellow lentils and 8 cups of vegetable broth.

Bring everything to a boil, then cover and simmer for 20 minutes.

Then transfer the soup to a blender in batches, blending everything until smooth. Garnish with red pepper flakes and chopped parsley (if desired) and serve with a delicious slice of crusty bread.

Storing tips

To store yellow lentil soup, make sure to let it cool completely at room temperature before storing it in airtight containers. It can keep in the fridge for 4-5 days and can be reheated easily in the microwave or on the stovetop.

The soup could thicken in the fridge, so stir in a little water when reheating it to reach your desired consistency. It can also be stored in the freezer for up to 3 months.

Ingredients

  • 1 Tbsp extra-virgin olive oil
  • 1 cup yellow onion, diced
  • 1 cup carrots, diced
  • 5 whole garlic cloves
  • 2 Tbsp salt
  • 1 Tbsp black pepper
  • 1 Tbsp cumin
  • 1 tsp turmeric
  • 1 lb yellow lentils, rinsed
  • 8 cups vegetable broth
  • Red pepper flakes for garnish (optional)
  • Fresh chopped parsley for garnish (optional)


Instructions

  1. In a large pot over medium-high heat, add olive oil, onion, and carrots. Cook, stirring occasionally, until softened, about 8-10 minutes.
  2. Add the garlic cloves, salt, pepper, cumin, and turmeric. Cook until fragrant, about 1 minute. Add the lentils, stirring it with the rest of the ingredients, and add 8 cups of vegetable broth. Bring everything to a boil, then simmer and cover until lentils are tender, about 20 minutes.
  3. Transfer the soup to an upright blender in batches, blending until smooth. Adjust seasonings if needed and top with red pepper flakes and chopped parsley if desired. Serve with a side of crusty bread and enjoy!
