Ingredients needed

- Cabbage: The star ingredient! The cabbage becomes deliciously tender once simmered in the pot.
- Onion, carrots, and celery: These classic soup veggies build up the aromatic flavor, adding subtle sweetness and depth.
- Extra-virgin olive oil: Used to sauté the aromatics and build the flavor base.
- Italian seasoning, salt, and pepper: Italian seasoning adds even more depth to the soup, while salt and pepper make everything pop!
- Garlic: Deepens the savory base.
- Orange and green bell peppers: Add brightness, earthiness, and texture to the soup.
- Potatoes: Make the soup hearty and satisfying.
- Vegetable broth: Forms the flavorful base of the soup.
- Crushed fire-roasted tomatoes: Adds richness and depth with smoky undertones.
- Green beans: Add texture and a pop of freshness.
- Fresh parsley (optional garnish): Brightens the finished soup.
How to make cabbage soup
Build the base
Add onion, carrots, and celery to a large soup pot over high heat and cook until softened. Toss in Italian seasoning, salt, pepper, and garlic, and cook until fragrant.
Add veggies and broth
Stir in the bell peppers, potatoes, and vegetable broth. Bring up to a boil, then reduce the heat, cover, and simmer until just before the potatoes are fork-tender (still firm but easily pierced with a fork).

Add cabbage
Add the crushed tomatoes and chopped cabbage to the pot. Bring back up to a boil, then toss in the green beans and cook, with the lid on, for 5 additional minutes, until the soup comes back up to a gentle boil. Toss in some parsley if desired.

Adjust, garnish, serve
Taste and add more salt and pepper as needed. Serve warm with a side of crusty bread and enjoy!
What to serve with cabbage soup
- Serve with thick slices of crusty bread. Perfect for dipping into the flavorful broth and soaking up every last spoonful!
- Pair with a classic cucumber tomato salad for a complete meal. A crisp salad with cucumber and tomatoes balances the warmth of the soup beautifully.
- Add a sprinkle of freshly grated Parmesan (if not keeping it plant-based). The salty, nutty finish enhances the savory depth of the broth.
- Serve alongside a grilled cheese sandwich for ultimate comfort food vibes. The melted cheese and crisp bread pair perfectly with the veggie-packed soup.

Tips and possible variations
One of my favorite things about this cabbage soup is how adaptable it is. You can easily adjust it based on what you have on hand or how hearty you’d like it to be. Here are a few suggestions:
- Add protein: Stir in white beans or chickpeas during the last 10 minutes of cooking to make the soup more filling and satisfying.
- Turn up the heat: Add a pinch of red pepper flakes while the soup simmers for a gentle warmth that complements the veggies.
- Make it richer or thicker: Mash a few of the cooked potatoes directly in the pot for a slightly thicker texture, or finish with a drizzle of olive oil before serving.
- Swap or add other vegetables: Cabbage soup is incredibly forgiving, which makes it perfect for adding extra veggies depending on the season or what you have on hand. Zucchini, kale, parsnips, or even some frozen corn work beautifully here. You can also do some swaps like substituting sweet potato for the Yukon Gold or leeks instead of onion for a slightly sweeter, more delicate flavor base.
How to store cabbage soup
Store leftover soup in an airtight container in the fridge for up to 4 days. To reheat, warm gently on the stovetop or in the microwave. Add a splash more of veggie broth or water if needed.
Freezer: Cabbage soup also keeps well frozen for up to 3 months. Make sure to let it cool down to room temperature before transferring to freezer-safe containers. Thaw overnight in the refrigerator before reheating.

- 1 1/2 teaspoons garlic, minced
- 1/2 cup orange bell pepper, chopped
- 1/2 cup green bell pepper, chopped
- 3/4 pound Yukon Gold potatoes, diced into 1/4-inch cubes (about 2 1/4 cups)

Toss in the green beans, cover the pot with a lid, and let cook for an additional 5 minutes. Once the soup reaches back up to boil, turn off the heat and remove the pot from the stove.
