Whenever we feel a craving for French fries, these homemade baked potato wedges always hit the spot. They’re super simple to make, tossed with just a few spices and then baked in the oven for about 40 minutes. The results are phenomenal: insanely crispy on the outside, light and pillowy in the inside, and full of smoky, delicious flavor.

These potato wedges pair perfectly with ketchup or any preferred dipping sauce like mustard and ranch. They also make a great side dish for meals such as burgers, sandwiches, and more. But don’t be surprised if you’re tempted to devour them straight off the baking sheet and ignore all restraint (which we aren’t ashamed to admit we sometimes do).

Ingredients for baked potato wedges

  • Potatoes: This recipe uses 3 medium russet potatoes, which will be peeled and cut into evenly shaped wedges. We’ll also soak them in lukewarm water first before baking to remove any excess starch.
  • Olive oil: Because these potato wedges are baked in olive oil, they make a much healthier alternative than fast-food French fries, which are typically deep-fried in canola oil.

How to make baked potato wedges

  • Cut the potatoes into wedges. Then soak them in a bowl full of lukewarm water for 10 minutes, which will help remove any excess starch that can prevent even cooking.
  • Toss with olive oil and the seasoning blend. Use your hands to toss the potatoes and ensure even coating of the seasoning over the wedges. Then lay out in an even layer on a baking sheet lined with parchment paper.

  • Bake in the oven for 30-40 minutes at 400°F. About halfway through baking, flip the wedges over with tongs or a spatula to ensure evenly golden, crispy edges all over.
  • Garnish with parsley if desired. And either serve as is or with your preferred dipping sauce.

  • 1 Tablespoon Italian seasoning

  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F and line a large, rimmed baking sheet with parchment paper.
  2. Rinse the sliced potato wedges under lukewarm water and let them soak for about 10 minutes to absorb any excess starch.
