- Bread: We use sliced brioche in this recipe, but any bread will work — sourdough, multigrain, whole wheat, an English muffin, or bagel. We also recommend lightly toasting so that the bread can support the cheese and eggs.
- Toppings of choice (optional): If you want to take this sandwich to the next level, you can add other toppings as well! Avocado, arugula, spinach, lettuce, tomato, and cooked meat like ham or bacon make great additions.
Tips and tricks
- Use medium-low to low heat to cook the scrambled eggs. Low and slow is the way to go. If needed, take the pan off the heat before the eggs are finished cooking.

- 2 slices bread of choice
- 2 Tablespoons butter
- Fresh chopped parsley as garnish
Instructions
- In a small bowl, whisk together the eggs, shredded mozzarella, and salt until they’re well-combined and set aside.
- Toast bread of choice in the toaster or toaster oven. Then heat a non-stick pan over medium-low heat and melt 1 Tablespoon of butter. Add the egg mixture and cook until scrambled.
- To assemble the sandwiches, lay bread slices on a clean cutting board. Spread the remaining butter on each slice and top with the egg mixture. Garnish with fresh chopped parsley and serve immediately.
