Plus it’s so simple to make that you can have it ready in under 10 minutes!
I also love how you can easily customize it by swapping the egg style depending on what you’re in the mood for: sunny-side up (like in this recipe), fried, poached, or scrambled. For an extra boost of fiber and good fats, I like to top off my avocado base with some seeds like chia seeds, pumpkin, and sunflower seeds, but it’s completely optional! - Eggs: This recipe calls for 2 eggs per 2 slices of bread, but you can easily up the amount if making several.
- Avocado: Make sure they’re ripe so that it’s easier to mash. This recipe calls for additional avocado slices on top of the mashed base for more texture, but you can stick with just the mashed avocados if desired.
- Seasonings: Salt, pepper, olive oil, and lemon juice for the mashed avocado
- Optional toppings: Seeds (chia, pumpkin, or sunflower), roasted red pepper flakes for an additional kick, everything bagel seasoning, microgreens
How to make avocado toast with egg
- Toast the bread: Toast slices of bread until golden and crisp.
- Mash and slice the avocado: Mash 2 avocados with olive oil, salt, pepper, and lemon juice in a small bowl. Slice an additional avocado if you prefer more texture.
- Cook the eggs your way: Sunny-side up, fried, poached, or scrambled
- Assemble: Spread a layer of the mashed avocado on each slice, followed by the sliced avocado. Top with seeds if desired, the egg, and finish with seasonings of your choice.

Ingredients
- 2 slices bread of choice
- 2 avocados, peeled and mashed
- 1 avocado, sliced
- 1 Tablespoon olive oil
- Pinch of salt and pepper
- 1 teaspoon lemon juice
- 2 eggs
- Seeds of choice like chia, pumpkin, sunflower (optional)
- Toppings of choice: red pepper flakes, everything bagel seasoning, microgreens (optional)
Instructions
- Lightly toast bread slices in a toaster or toaster oven. In the meantime, peel 3 avocados. Slice one into thin slices and set aside.
- In a small bowl, combine the remaining avocados, olive oil, salt, pepper, and lemon juice. Using a fork, mash everything together until thoroughly combined.
- Spread an even layer of the avocado mixture on each bread slice. If desired, add a mixture of seeds on top and drizzle with olive oil. Then top with the sliced avocado.
- Heat a non-stick pan over medium-high heat with olive oil or butter until hot. Cook the eggs uncovered until whites are completely set and yolks are thickened to your liking, about 5-7 minutes.
- Top the bread slices with the eggs and season with red pepper flakes. Serve immediately and enjoy!
