Ingredients needed

  • 1 large cauliflower: The main star of the show! We recommend aiming to cut 3 cohesive steaks from the one cauliflower. You’ll have a lot of extra cauliflower florets leftover, but you can simply roast them alongside the steaks!
  • Extra-virgin olive oil: You’ll use some for the spice mixture that the cauliflower will be drizzled in, which will help perfectly caramelize the edges of the cauliflower.
  • Shredded mozzarella & Parmesan: The cheese, which we’ll sprinkle on top towards the end, melts beautifully over the steaks and imparts a warm flavor that will complement the roasted cauliflower.
  • To season: Paprika, salt, and pepper, which will enhance the natural flavor of the cauliflower.

How to make cauliflower steaks

Prep the cauliflower

Remove the outer leaves from the cauliflower, then stand it upright on its bottom stem. Starting from the center of the cauliflower, slice 3 “steaks” (about 1 1/2-inch thick) while keeping the core intact.

Prepare the seasoning mix

In a separate small bowl, combine paprika, salt, pepper, and olive oil. Then place the steaks on a baking sheet and rub both sides with the spice mix.

Bake and add cheese

Bake for 20-25 minutes, until the edges are deeply golden and the core is fork-tender. Sprinkle mozzarella and Parmesan evenly on top of each steak, then put the oven on broil and return the cauliflower to the oven for 3-5 minutes, until the cheese is bubbly and lightly browned.

Then, serve! Drizzle a little more olive oil on top, garnish with parsley if desired, and serve immediately.

FAQ on cauliflower steaks

How do I keep cauliflower steaks from falling apart?
Keep the core intact while slicing, which will help hold the steaks together. Make sure to use a chef’s knife that’s sharpened and cut straight down.

Can I make these dairy-free?
You absolutely can! Just substitute the mozzarella and Parmesan with your favorite dairy-free alternatives.

Can I prep cauliflower steaks ahead of time?
You can slice and season the cauliflower a few hours in advance. Roast and add cheese just before serving for the best texture.

Can I use frozen cauliflower for this recipe?
We don’t recommend using frozen cauliflower for this recipe, as it won’t hold its shape as a steak. Using a regular fresh head of cauliflower is key.

Description

These cheesy baked Cauliflower Steaks are crispy on the edges, tender in the center, and loaded with melted mozzarella and Parmesan. A simple, flavorful, low-carb recipe you can serve as a side or a meatless main dish!

Ingredients

Scale
  • 1 large cauliflower
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • Fresh chopped parsley as garnish (optional)

Instructions

  1. Preheat the oven to 400°F and line a large, rimmed baking sheet with parchment paper.
  2. In a small bowl, add paprika, salt, pepper, and olive oil and mix vigorously until well-combined. Set aside.
  3. Remove the outer leaves of the cauliflower, then slice 3 “steaks” (about 1 1/2-inch-thick) from the center of the cauliflower, keeping the core intact. For any cauliflower that you have left, simply roast them as florets along with the steaks.
  4. Transfer the steaks to the baking sheet in a single layer and scatter the florets around them. Using a brush, both sides generously with the spice mixture, using your hands to rub it into the steaks. Roast in the oven for 20-25 minutes, or until the core is fork-tender.
  5. Remove the steaks from the oven, sprinkle the mozzarella and Parmesan cheese on top, and place back in the oven on broil until melted, about 3-5 minutes.
  6. Assemble plates with another drizzle of olive oil and a sprinkle of parsley for garnish, if desired, and serve.
