  • 1 pound conchiglie pasta
  • 2 tablespoons olive oil
  • 1/2 cup pesto
  • 3/4 cup heavy cream
  • 1/4 cup sun-dried tomatoes
  • 8 oz mozzarella balls
  • Salt and pepper, to taste
  • Red pepper flakes as garnish (optional)
  • Fresh chopped parsley as garnish (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Cook the conchiglie according to the package instructions, until al dente. Reserve 1 cup of the pasta cooking water, then drain the rest.
  2. Heat a large skillet with olive oil over medium heat. Add the pesto and stir frequently into the oil as the pesto warms. Once warmed and a little bubbly, add in the heavy cream in a slow consistent stream while stirring. Continue stirring until well-incorporated.
  3. Transfer the cooked pasta to the skillet and stir to coat it evenly with the pesto sauce. If the pasta still seems dry, add 1/2 cup or more of the starchy pasta water little by little to thin out the sauce, if needed. Add the sun-dried tomatoes, and taste and adjust seasoning as necessary.
  4. Remove the pan from the stove and toss in the mozzarella balls. Transfer to serving plates or bowls, garnish with fresh parsley if desired, and serve.
