Everything Bagel Breakfast Casserole

Why we love this recipe

There’s something about everything bagels that make them so delicious and go with just about anything! They’re great toasted with a layer of cream cheese and make excellent breakfast sandwiches, but they truly stand out in this dish. Toasted pieces of everything bagel tossed with roasted tomatoes, fluffy eggs, and dotted with scallion cream cheese, this bagel bake is the stuff of lazy weekend mornings.

And not only is it easy to make and downright tasty, it’s perfectly sized to feed a crowd with hardly any effort on your part and can be made ahead of time. Quick prep, a few ingredients, delicious payoff: it’s everything you want in an excellent brunch dish.

What you’ll need

Like many of our favorite recipes, this everything bagel breakfast casserole comes together with just a few ingredients.

  • Everything bagels: We use store-bought in this recipe, which is the easiest route to take. Cut 3 bagels into big bite-size pieces, which we’ll pre-toast so that they don’t get soggy while baking with the rest of the ingredients.
  • Eggs and whole milk: The base for the casserole dish. We’ll whisk them together along with salt and pepper, then toss the bagels in the mixture to soak.
  • Grape tomatoes: We’ll toss them in olive oil, salt, and pepper and roast them in the oven until just bursting.
  • Chive or scallion cream cheese: You can’t have bagels without the cream cheese! We’ll be dotting the assembled casserole dish with the cream cheese before baking it in the oven, to deliver maximum flavor.

How to make everything bagel breakfast casserole

We’ll first toss grape tomatoes with olive oil, salt, and pepper on a baking sheet and roast in the oven at 400 degrees F for about 10-15 minutes. (If making the casserole ahead of time, roast the tomatoes when baking on the day.)

Then split 3 medium-sized everything bagels in half and cut into bite-size pieces before toasting in the oven alongside the tomatoes, about 8-10 minutes.

Whisk together eggs, milk, and salt and pepper and toss with the toasted bagels. Let sit for at least 15 minutes or up to overnight.

Fold the roasted grape tomatoes into the bagel mixture and dot with the cream cheese.

Bake everything in the oven at 350 degrees for 40-45 minutes. Then serve immediately and enjoy a delectable everything bagel breakfast casserole!

Ingredients

  • 6 oz of grape tomatoes
  • 2 Tablespoons olive oil
    1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 medium-size everything bagels, split and cut into 1.5-in pieces
  • 4 large eggs
  • 1.5 cups milk
  • 1/2 cup chives or scallion cream cheese


Instructions

  1. Preheat oven to 400 degrees F. In a small ceramic oven-safe bowl or baking sheet, toss grape tomatoes with the olive oil, salt, and pepper. Roast for about 10-15 minutes or until slightly soft and starting to reduce.
  2. While the tomatoes are roasting, arrange the sliced everything bagels on a separate baking sheet and toast in the oven with the tomatoes for 8-10 minutes, until slightly golden brown.
  3. In a large baking dish, brush lightly with olive oil and then add the eggs, milk, and additional salt and pepper. Whisk together until combined.
  4. When the bagels are done toasting, remove from oven and add them to the prepared baking dish. Toss with the egg mixture and let sit in the fridge for 15-20 minutes.
  5. Remove the tomatoes and reduce oven to 350 degrees F. Add the tomatoes into the baking dish, fold them into the bagel mixture, and dot with the cream cheese.
  6. Bake until set for 40-45 minutes and a knife inserted into the center comes out clean. Serve and enjoy!
