They’re packed with protein, fiber, iron, calcium, and potassium, to name a few. We use canned chickpeas for this recipe because it keeps prep time at a minimum. Just make sure to rinse and drain them to remove excess salt.
  • Grape tomatoes: We love the sweetness and tanginess that the grape tomatoes add to the salad. You can also substitute with diced Roma tomatoes.
  • Red onion: Adds a bright, zippy flavor to the salad.
  • Juice of 1 lemon: Freshly squeezed lemon juice is a must!

How to make chickpea feta salad

We promised this would be an easy recipe to follow and we meant it! Minimal chopping is required and only one bowl is needed to toss everything together.

  • Toss everything together. Add chickpeas, tomatoes, parsley, red onion, feta cheese, and lemon juice, and toss to combine. Season to taste with salt, pepper, and olive oil.

Ingredients

  • 1 15.5-oz can chickpeas, rinsed
  • 1 cup grape tomatoes, halved
  • 1 cup fresh parsley, chopped
  • 1/4 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • Juice of 1 whole lemon
  • 2 Tablespoons olive oil
  • Salt & pepper to taste


Instructions

  1. In a large bowl, add chickpeas, grape tomatoes, parsley, red onion, and feta cheese and toss to combine.
  2. Add lemon juice and olive oil, and mix to coat. Season to taste with salt and pepper.
  3. Serve immediately or store in the refrigerator before serving.
