It’s been my go-to cold-weather spice for as long as I can remember, whether stirred into oatmeal, sprinkled on coffee, or baked into everything. But it took me embarrassingly long to realize it makes one of the simplest, most comforting teas imaginable. No tea bags, no steeping, no fuss. Just cinnamon, water, and a little honey are all you need!
The method I use for my Cinnamon Tea is one that has become my go-to since I started making my golden milk turmeric tea the same way. Mix cinnamon, water, and a little honey and freeze into ready-to-use spice cubes. Keep the tray in your freezer and your morning cup is always two minutes away: 1 cube, hot water or warm milk, a drizzle of honey, and you’re done!
What is cinnamon tea?
Cinnamon tea is exactly what it sounds like: a warm, lightly spiced drink made by infusing cinnamon into hot water or milk. Unlike most herbal teas, it doesn’t come from a dried leaf or flower. Cinnamon is the dried inner bark of Cinnamomum trees, which gives it that distinctive warm, woody sweetness. It’s been used medicinally for thousands of years across South Asian, Middle Eastern, and Mediterranean cultures as a remedy for everything from blood sugar support to digestion.

Cassia vs ceylon cinnamon
Cassia: The most common variety sold in almost all standard grocery stores. It has a bold, intense, slightly spicy flavor and a deep reddish-brown color. Cassia also contains higher levels of coumarin, a naturally occurring compound that can be harmful in very large amounts over time. Fine for occasional use, but if you drink cinnamon tea daily, it’s worth being mindful of the quantity.
Ceylon (aka “true” cinnamon): Ceylon cinnamon is lighter in color, more delicate in flavor, and significantly lower in coumarin, which makes it the preferred choice for regular consumption. It has a subtler, almost citrusy sweetness compared to cassia’s more intense punch.
Ingredients needed

- Ground cinnamon: The soul of this recipe. Ground cinnamon dissolves easily in water and freezes well, making it ideal for the spice cube method. Use Ceylon for a more delicate flavor (and if you plan to drink cinnamon tea regularly) or cassia for a bolder, spicier cup.
- 1/2 cup water: The base that brings the cinnamon together into a pourable blend. Water lets the spice mix evenly across the tray so every cube is perfectly consistent and clump-free.
- Honey (optional, to serve): A touch of honey is already added into the cinnamon mix before freezing. But if you’d like more to serve, simply stir into your mug when you’re ready to drink.
How to make cinnamon tea
Prepare the spice cubes
Add the ground cinnamon and honey to a small bowl. Pour in ½ cup of water and whisk vigorously until the cinnamon is fully incorporated and no clumps remain. The mixture will be more on the thicker side, but that’s normal.


Transfer to ice cube tray
Pour the cinnamon mixture into an ice cube tray, dividing it as evenly as possible across the compartments.

Freeze the ice cubes
Freeze for at least 3 to 4 hours, or overnight until fully solid. Once frozen, pop the cubes out and transfer to an airtight freezer bag or container to free up your tray. The cubes will keep frozen for up to 3 months.
To serve
Place one cinnamon spice cube into your mug, then carefully pour in 8 to 10 oz of boiling water or hot milk of your choice to melt it. Stir until the liquid is a warm, even cinnamon-brown color. Add honey to taste, give it a final stir, and enjoy!
