Thinking of what to make for dinner can be very stressful, from planning and shopping to cooking and cleaning. That’s why sheet pan dinners have become my favorite way to cook because they’re quick, easy, require almost no effort, and best of all, save you the time to clean up the dishes because everything’s cooked in one pan!
This sheet pan sausage & vegetables is one of the most popular dishes in our home. It starts with ingredients that are already flavor-packed and healthy, from the Italian chicken sausage used in this recipe to the fresh vegetables: mini sweet peppers, broccoli, red onion, and potatoes. Finally, add some seasonings like red pepper flakes and Italian seasoning, and you got yourself a stress-free, delicious meal to tuck into!

- Chicken sausage: Mild Italian sausage is used in this recipe, but you can easily swap for other variations. They’ll be sliced and cooked last after the vegetables.
- Broccoli: Cut into bite-size florets from about 1 large broccoli crown.
- Baby potatoes: We’ll be roasting them skin-on with the rest of the vegetables.
- Mini sweet peppers: I love using these because they come in a variety of colors and add a great texture to the dish. You can swap for whole red, orange, and yellow bell peppers if desired.
- Red onion and garlic: We’ll quarter the red onion and add 5 whole garlic cloves to the pan.
- Various herbs: Salt, pepper, Italian seasoning, olive oil, and roasted red pepper flakes to zhuzh things up
How to make sheet pan sausage & vegetables
It’s ridiculously easy to put this all together, with just 2 simple steps:
Cut up all the vegetables, then arrange them on a large baking sheet along with olive oil, Italian seasoning, salt, pepper, and red pepper flakes. Toss to coat everything and bake in the oven at 400 degrees F for 25 minutes.

Add in the chicken sausage and bake again for another 30 minutes, or until the sausage is warmed through and the vegetables are crisp and tender. Then serve immediately and enjoy. It’s that simple!

Ingredients
- 1 pound baby potatoes, halved
- 1 medium broccoli, cut into florets
- 5–6 mini bell peppers, chopped
- 1/2 red onion, quartered
- 5 whole garlic cloves
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon Italian seasoning
- Salt
- Black pepper
- Pinch of crushed red pepper flakes
- 12 oz. mild Italian sausage, cut into 1/2-in rounds
Instructions
- Preheat oven to 400 degrees F. On a large sheet tray, arrange potatoes, broccoli, red bell pepper, red onion, and garlic cloves. Drizzle with olive oil and season with Italian seasoning, salt, pepper, and red pepper flakes.
- Toss to coat all the veggies and spread into an even layer. Bake in the oven for 25 minutes, then remove the tray and add the sausage. Toss with veggies and spread back into an even layer.
- Bake again for another 30 minutes, or until sausage is browned and warmed through and the vegetables are crisp and tender.
- Serve immediately and enjoy!
